All products carrying Valcolatte logo are made only with Italian milk, and production takes place every day. We collect all our milk in farms situated in Lombardy and Emilia-Romagna region.

We are fully aware that health and hygienic standards are key issues for every food company and so we created a control system that traces back each drop of milk we use. We record and keep data about milk intake everyday; information about farm of origin, quantity, steel tank for intake and storing.

We use about 260,000 litres of milk per day. Our traceability system allows us to trace back each ingredients we use and their batches for each production line. Thanks to these procedures we can trace back all ingredients used for cheese production (milk, salt, rennet, starter cultures etc.) and their origin.

Our technicians make tests in all the farms from which we collect milk every six months. In particular they check: hygienic standards of milking facilities, milk storing temperature in the stable, general hygienic conditions.
